With two more lessons than the Odilia basic course , meets a total of five classes per week, where the student will have the opportunity to learn five complete different menus. On the Third and fourth day Tuesday and Thursday, instead of free time, you will have the opportunity to learn more about Italian cooking. For example, the first additional lesson will be focused on the preparation of different kinds of appetizers and vegetable side dishes. Examples include the classic eggplant and zucchini parmigiana , bittersweet red and yellow peppers, and spicy green peppers from the river with cherry tomatoes. You will also learn how to prepare veal carpaccio with celery and chips of parmesan cheese, how to make the real meatballs for the Neapolitan Ragu’ and eggplant-bal to serve with fresh sauce mozzarella and basil, and many other dishes that we will select together. On the Fifth day you will learn the very specific preparation of the dough to make genuine Neapolitan enriched bread or focaccia and pizza. For this occasion you are requested to invite all your friends to pay us a visit, as we will arrange real “all you can eat pizza party“ that will be accompanied by the traditional “caponata” and by “mussels impepata, ” boiled with black pepper and covered with fresh-squeezed lemon juice.
* Note: The classes are in the afternoon starting at 3:30 pm until 8 pm If we have a large amount of students attending the classes we add an extra morning class starting at 11:30am.
