Month 1 - THE TRAINING
Neapolitan and Mediterranean culinary arts are the focus at Mami Camilla. This
course offers complete training of fresh made pastas, sauces, vegetable cooking
styles, and techniques for fish and meat. Particular attention will be given to the
importance of the Mediterranean diet and its healthy content with emphasis on the
simplicity in combining fresh, seasonal ingredients.
In this first month we highly recommend taking the Mami Camilla Italian language
course. The Italian language course offered is custom designed for culinary students.
The first half of the class focuses on the basics of Italian while the second half teaches
the student kitchen Italian. In this part of the class, the student will learn to read and
write menus and recipes and learn food & kitchen vocabulary. Understanding the
basics of Italian and kitchen vocabulary will make your time in Italy more beneficial
and rewarding.
The average day during the first month will consist of 2.5 hours of Italian language
class and 4 hours of kitchen class (M-F). Daily in the kitchen class, the student will
learn a new menu consisting of an antipasto, a fresh pasta, meat/fish course, and
dessert.
Months 2 & 3 / WORK
At the end of month 1, the staff at Mami Camilla will meet with a manager in one of
the affiliated restaurants. At that point the student will be assigned to a specific
restaurant or hotel where the student will schedule hours to work for the remainder of
the internship. Work in the affiliated restaurant or hotel is UNPAID. The affiliated
restaurants or hotels are located in the Sorrento area.
A 6-week internship is also available: 4 weeks of classes + 2 weeks of work placement
ACCOMODATION DETAILS:
The student will stay at Hotel Soleluna located in Piano di Sorrento right where is Mami Camilla Cooking School, for the entire internship. Soleluna is a
small and comfortable Hotel, room and breakfast daily is provided. Hotel Soleluna offers both
private and a dormitory style room. Dinners are provided after class during the first four weeks
of classes.
Cost varies, depending on the length of stay and specific room accommodation.
